Restaurant Style Salsa

This is a recipe I got from the Pioneer Woman. She has some wonderful recipes and is a hilarious writer! If you've never been to her website, check it out! She blogs about life, cooking, photography, homeschooling, and home/garden.
I changed the recipe a bit. I can't seem to follow a recipe exactly. Maybe that's why I'm not a very good baker... 

Restaurant Style Salsa




Ingredients:
1 whole tomato (I left one out... I was planning on doing two. oops.)
1 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
1/4 cup chopped onion
A lot of minced fresh garlic (My cloves were really small, so I just kept adding garlic.)
1 whole Jalapeno
1/4 teaspoons sugar
1/2 teaspoon salt (I kept tasting the salsa and adding more salt as I went along.)
1/4 teaspoon Ground Cumin
1/2 cup Cilantro
1 tablespoon lime juice
Chips- Tostitos Roasted Garlic and Black Bean. Fantastic. 



Combine all ingredients in food processor. Pulse until you get the salsa to a desired consistency. I did mine more on the thin side. Test the salsa with tortilla chips. Do this several times. You want accurate results. Refrigerate for 30 minutes. Enjoy.

I got this bacon from Mark, the manager/meat specialist in the meat science building. He asked what kind I wanted, "regular or peppered." Before he even finished saying peppered, I was saying, "PEPPERED!" This bacon is delicious. It's cured with water, salt, maple sugar, and brown sugar. Need I say more?
