I found this recipe at How Sweet Eats. Love this blog. Her recipe calls for mushrooms and grilled herb bread. I don't like mushrooms, so I caramelized some onions instead. I didn't have any bread, but would love to try grilling bread soon! This is a super tasty and easy recipe!
Ingredients:
4 thinly sliced boneless, skinless chicken breasts (I used one or two breasts that I sliced in half or thirds. Can't remember!)
1/3 cup all purpose flour
2 tablespoons olive oil
3 tablespoons butter
1 small onion, sliced
1/3 cup white wine
salt and pepper
Salt and pepper the chicken, dredge in flour, and add to a pan with hot oil. Brown chicken on both sides and cook all the way through.
Set the chicken aside. Saute the onions in the same pan with more butter and sprinkle them with salt and pepper. Add the white wine. Add the chicken back to the pan to warm up.
I also sauteed some fresh asparagus in garlic and oregano olive oil, lemon juice, garlic, salt, and pepper.
Delicious dinner. It's a really simple way to cook chicken, but it's very good. Hope you like it!
