Honey Nut Chicken is one of my favorite recipes. It's from my favorite Food Network cook, Rachael Ray! yum-o! The recipe calls for honey roasted peanuts, and in the half a dozen plus times I've made this recipe, I've never actually used peanuts. I think I used glazed walnuts the first time and pecans and honey the rest of the time.
Ingredients:
2/3 cup pecans
Honey
1/2 cup plain bread crumbs
1 tablespoon grill seasoning blend (recommended: Montreal Seasoning by McCormick)
2 eggs
A splash 2% milk
2 teaspoons hot sauce
1/2 cup all-purpose flour
2 to 3 tablespoons vegetable oil
4 (6 to 8-ounce) pieces of chicken breast
I cooked one large chicken breast, so I reduced the ingredients by about half.
Directions:
- Put nuts, bread crumbs and grill seasoning in food processor and pulse grind to combine the nuts into bread crumbs. Pour nutty-breading into a plastic container.
- Beat eggs and half-and-half or milk with hot sauce in a plastic container.
- Pour flour on a plate.
- Dust both sides of the chicken with flour. Dip the chicken into the egg mixture and then coat with the nutty-breading.
- Preheat a nonstick skillet over medium high heat. Add vegetable oil to coat the bottom of the pan with a thin layer. Brown chicken pieces 3-4 minutes on each side in hot oil or until light golden in color. Drizzle honey on both sides of the chicken as it's cooking.
- Transfer to a baking sheet, drizzle more honey over the chicken, and cook in oven until juices run clear and breasts are cooked through, about 10 to 12 minutes at 350 degrees.
Just about every time I go to the grocery store, I buy a sweet potato. They're delicious. I searched Food Network to find a tasty sweet potato fries recipe and ended up sorta combining two recipes. One from Paula Deen and the other from Food Network magazine.
I sliced the potatoes into french fry like pieces, narrowly avoiding cutting off 3 fingers. Sweet potatoes are hard to chop!! I used the Basil and Garlic olive oil (Oregano and garlic? Either way, it's delicious.) I got for Christmas from Mom, cumin, chili powder, salt, and pepper.
Baked them between 425-450 for about 30 minutes. I got impatient and took them out before they got crispy, but they were delicious.
